Easy Weekend Lunch
Even with the Labor Day Weekend behind us - the farm stands and garden are still filled with good things to eat...
Here is a favorite salad combination that I love...
Slice some peaches, apricots or plums (whatever is fresh and ripe) over a bed of organic baby spinach...
Sprinkle some crumbled feta cheese over it for a nice mix of flavors (sweet and salty)...
For a dressing - I am using a new favorite find - Fig Infused Balsamic Vinegar or you could use the regular one too...
Serve with some rustic farm bread or french baguette ripped up into causal pieces...
Summer may be officially over - but you can still enjoy the goodness of the season!
