All about salads...
- In a quest to enjoy the summer harvest from the garden - salads were on the agenda a few times over the weekend with guests...Here was one that was created for lunch - a new take on the traditional Greek Salad...
- Tomatoes, cucumbers, green pepper, red onion, green olives and feta cheese all chopped up together...Add some fresh oregano (we included the flowers from the oregano plant to add some color), fresh basil and a bit of olive oil and champagne vinegar to finish it off...You can add some sea salt to bring out all the flavors...
- Another meal - a take on the classic chicken salad - but this time a curried chicken salad...You see that I don't list out exact measurements or recipes because most-times I like to create something or take a classic dish and change it up...That is why I find cooking so relaxing because it's a journey you go on creatively in a short period of time...By the end, you hopefully end up with something good and uniquely different...
- For this one, let a few chicken breasts simmer in some salted water...Once cooked through - simply set aside on a plate to cool...
- Chop some celery, some green grapes, one shallot, a few chives, fresh basil, a half a cup of walnuts, peanuts or cashews...
- Separately, mix together in a bowl, some Greek yogurt, a bit of olive oil and sprinkle in as much curry powder as you like and whisk together...You can add some salt and pepper to taste - but I usually wait until the end...
- Roughly chop up the cooled chicken and mix all the items together in a large bowl...Pour the dressing over it all and mix well...
- This one gets better with time - so you could make this the night before to enjoy the next day...
- Peaches are very much in season now...Used those a few times in salads too...Sometimes I slice them as is on a bed of arugula or, if I'm grilling, I'll cut them in half and brush some olive oil on them...Grilling brings out the sweetness of them and they can top a salad too...Try a flank steak and grilled peach salad...
